Temperature is the variable, not time
“Bulk for four hours” is not a recipe instruction. It’s a recipe instruction for one particular kitchen — and if yours is three degrees cooler, four hours leaves you a third short of where that recipe’s author was.
Fermentation is enzymatic and microbial, and both scale with temperature in a way that’s well described over normal dough temperatures by a Q10 coefficient: the factor by which rate changes per 10 °C.
time = reference time × Q10 ^ ((reference temp − dough temp) ÷ 10)
For yeast and lactic acid bacteria in dough, Q10 sits somewhere around 2 to 3 across the 18–30 °C range. This calculator defaults to 2.4 and leaves the field editable, which is deliberate — see below.
What this tells you, and what it doesn’t
It tells you when to start looking. It does not tell you when to stop.
The dough is the authority. Rise percentage, the dome on the surface, the bubble structure at the edge of the container — those are measurements of what actually happened. This is a prediction of roughly when it should happen, so you’re not opening the container every twenty minutes or, worse, discovering at hour six that you overshot at hour four.
Things this model does not know about, all of which move the curve:
- Starter health and inoculation rate. A sluggish starter and a vigorous one at the same temperature are not the same clock.
- Flour. Whole grain ferments faster than white — more enzyme activity, more available food.
- Salt. Higher salt slows fermentation measurably.
- Dough temperature drift. Your dough does not hold one temperature for four hours. It tracks the room, and it generates a little heat of its own.
Calibrate the coefficient against your own dough
This is the part worth doing once. Bake the same formula twice at temperatures a few degrees apart, note how long each took to hit the same rise percentage, and solve for the Q10 that fits:
Q10 = (time₁ ÷ time₂) ^ (10 ÷ (temp₂ − temp₁))
Put that number in the field instead of 2.4. From then on the estimator is tuned to your flour, your starter, and your kitchen — which is worth more than any published figure, including this page’s default.
